This makes about 4 servings in small ramekins/bowls
You will need:
1. To make the custard:
- Cream cheese (should be at room temperature) : about 1 cup - Sugar: 1 cup - 3 eggs - 1 tsp vanilla essence
- 1 cup milk
2. To caramelize sugar:
- Sugar (obviously!) - a heavy thick skillet
DIRECTIONS:
1. Mix the cream cheese, sugar & eggs together using a beater. Then add the vanilla essence and milk and continue mixing them:
2. This is how it will look after beating them together
3. Caramelizing the sugar (super fun part): Add sugar to a heavy skillet (if the skillet its too thin/weak, you will make a mess out of it). Start melting it at medium high at first, keep stirring it throughout!. This is how it looks after about 3 minutes.
4. Now bring it to medium low heat. This is how it looks after 2 minutes. Don't forget to keep stirring!
5. And finally, after about 2 more minutes of stirring on medium low heat. Voila! That's caramel for you: WARNING: Be very very careful, do not touch it!
6. While the caramelized sugar is hot (I mean, immediately!), pour it into the ramekins:
7. Now pour the custard mix into each of them.
8. Keep the ramekins inside an oven-friendly tray that's filled 1/4 with water; this is to even out the heat distribution while they're in the oven
9. Cook them in the oven at 400 F for 30-35 minutes. Et Voila! You can have it as it is from the ramekins, or invert them on a dessert plate. Chill it in the refrigerator for a while, it tastes best when chilled. If you think it is fattening, it certainly is! But it is also super delicious:)
